I can’t tell you how surprised I was to discover how easy vanilla extract was to make. I normally do mine at around this time of year when there’s often small amounts of spirits left in bottles, from all the cocktails and merriment, and vanilla pods left over from all the puddings!
Here’s what you need; Alcohol, I used vodka as it has very little flavour and no colour
Vanilla Pods, I went Fair Trade
Preserving bottles, I used Kitchen Crafts’s 80 ml bottle available in the shop.
You’ll also need a knife and a chopping board
First, carefully slice the vanilla pod open without cutting all the way through.
Next, fold the pod and push it into the bottle with the slit facing outwards to release the flavour. Then top up with the alcohol
Tuck away your extract in a cool dark place (cupboard under the stairs for me) for 6 weeks until its a yummy caramel colour.
